Almost everyday, we eat Indian cuisine but there are times when it gets too boring. On days like that, we like to have our meal with potatoes and a salad – cucumber, tomatoes, beans and coriander leaves with salt, olive oil and fresh lemon juice dressing. Since we are not fond of most kinds of salad leaves, this is perfect for us 🙂
I love the summer baby potatoes here. Only thing that takes time is washing off the dirt on them but cooking/baking them is a breeze! Even though they are baby potatoes, we like to cut them into halves. I coat the potatoes with a little salt, olive oil and red chilli powder. Then, bake them in a preheated oven at 180°C for 30 minutes.
Baked potatoes and fresh salad make a great meal option on hot summer days along with a glass of cold juice!
